Welcome to Pralines and Greens! Since I adopted a plant-based lifestyle, I feel better than ever! Now, I want to share that with you. This is why I decided to create this blog, so I can share just how easy a plant-based lifestyle can be.
My name is Lindsey and I live in Southern California with my amazing husband and son. I’ve spent the majority of my 20’s completing two graduate degrees. During this time, I’ve done a lot of scientific research and even had the opportunity to publish my work, but ultimately I found that research did not fulfill me like I thought it would. Currently, I am completing my second degree, which pertains to the intellectual property associated with scientific discovery. While I still have a few more years left of school, which I am enjoying immensely, I long to express my creative side. Thankfully, Pralines and Greens has been a great outlet for me. Up until this point in my life, I never had a hobby that I felt so passionate about and it feels so rewarding to enjoy something so much.
I started making small and sustainable steps toward a plant-based lifestyle after I developed several food sensitivities that began interfering with my daily life. I was feeling exhausted, bloated, moody, and worst of all, patches of eczema started erupting seemingly out of nowhere. With my eczema getting worse and worse by the day, I decided something had to change—and fast! I wanted to get to the root of the problem instead of masking the symptom. By taking care of my body from the inside out, not only has my eczema disappeared, but I am aware of what my body needs and how to properly nourish it. As my journey evolves, I have become increasingly more interested in the benefits of a plant-based lifestyle and all the tasty recipes that go with it.
I always focus on nutritious, whole food ingredients that will leave you feeling your best. My recipes revolve around fresh vegetables, fruits, whole grains, beans, lentils, nuts and seeds.
