    This Banana Nut Smoothie with Lucuma is an excellent way to cool down on a hot summer day!  Although, I have a feeling I will be making this smoothie throughout the year.

    Banana Nut Smoothie with Lucuma

    If you haven’t heard of Lucuma, let me briefly explain what this crazy sounding ingredient is.  Lucuma is a sub-tropical fruit, which is native to Peru, Chile and Equador.  Lucuma has a distinctively sweet flavor with hints of caramel and maple, but is low on the glycemic index, making it a healthy choice for individuals seeking to decrease their sugar consumption.

    In addition to satisfying your sweet tooth, Lucuma is naturally rich in beta-carotene and iron.  Beta-carotene is a red-orange pigment that is converted into vitamin A in our bodies, where it encourages cell repair and growth.  Additionally, 1 tablespoon of Lucuma powder contains 6 percent of the recommended daily value (RDV) for iron, which plays an important role in boosting energy levels by improving the transportation of oxygen to cells.

    Banana Nut Smoothie with Lucuma

    This smoothie contains Lucuma powder, which is formed from dehydrating the Lucuma fruit. I typically add Lucuma powder to my smoothies, but it can also be blended it into desserts and baked goods for a sweet and flavorful nutrition boost.  This smoothie is sure to help you feel your best!

    Ingredients

    Units Scale
    • 2 tablespoons coconut butter
    • 1 tablespoon Lucuma powder
    • 1 tablespoon cacao nibs
    • ½ teaspoon cinnamon
    • 2 bananas
    • ¼ cup walnuts
    • 5 ice cubes
    • 1 cup almond milk

    Instructions

    1. Add all ingredients to a blender and process until combined.
