Even though it’s officially fall, the weather in California is still reminiscent of summer. With another (and hopefully the last) heat wave rolling through, this Blueberry and Coconut Smoothie was such a nice way to cool down.
The blueberries and mango impart the perfect amount of sweetness. Paired with coconut, this combination makes you feel like you are on a tropical island! I love using coconut in recipes, that's why these flavors were such a natural option for me.
The meat and water within coconuts are rich sources of nutrients. The list of benefits you can obtain from coconuts goes on and on. In this recipe I used coconut butter and meat. Coconut butter is made from finely ground coconut meat and has the texture of peanut butter. Coconut meat is the rich white lining within the shell of a coconut.
Of course, this recipe doesn't require you buy an actual coconut and crack it open in order to get the meat. My grocery store sells coconut butter near the peanut butter and sells pre-portioned packets of coconut meat in the freezer section.

Ingredients
- 1 cup frozen blueberries
- 1 cup frozen mango
- ¼ cup coconut butter
- 4 ounces coconut meat
- 1 tablespoon chia seed
- 5 swiss chard leaves + stems
- 2 cups water
Instructions
- Add all ingredients to a blender and process until combined.
