This refreshing Orange and Celery Beet Juice is an absolutely delicious recipe! When I first made it I loved the color, but I wasn’t sure how the tastes would blend together. Mixing orange and beets seemed like a no brainer, but adding in celery and ginger? Well, it turned out simply amazing!
I feel like beets don't get as much love as they should. One neat thing about beets is that their rich pigment comes from betalains. There are two basic types of betalains, betacyanins and betaxanthins. Betacyanins are pigments red-violet in color. Whereas, betaxanthins are yellowish in color. Betalains are known to provide antioxidant, anti-inflammatory and detoxification support.
Also, if you simply throw away the green leafy tops to your beets, you're doing yourself a disservice, as these are among the healthiest part of the plant. Beet greens actually have even more iron than spinach as well as a higher nutritional value overall than the root itself.
If you've never tried beet greens before, don't let them intimidate you. They can be added your juice or sautéed lightly with olive oil and lemon.

Ingredients
- 2 beets + green tops
- 1 head of celery
- 1 orange (peeled)
- 1 lemon (peeled)
- 1- inch piece of ginger
Instructions
- Process all of the ingredients through a juicer.
- Pour and serve immediately.
- Prep Time: 5 minutes
- Cook Time: 5 minutes
